  • 1/4 cup chopped cilantro
  • 2 tbsp coconut oil
  • 1 tbsp olive oil
  • 1 garlic clove (minced)
  • 1 cup coconut milk
  • 2/3 cup chicken broth
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Heat a large oven-safe skillet over medium heat; add coconut oil and olive oil.
  3. In a bowl, mix flour and chopped cilantro. Coat each chicken breast in the mixture and sear in the skillet for 3-4 minutes on each side until browned.
  4. Add minced garlic to the skillet and cook for an additional 30 seconds.
  5. In another bowl, mix coconut milk, chicken broth, brown sugar, and juice from one lime; pour over chicken.
  6. Transfer the skillet to the oven and bake for 10-15 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  7. Garnish with extra lime juice, cilantro, and green onions before serving.
